Flattop Coffee Roastery is a small batch coffee roastery specializing in high-end specialty and single-origin coffees. The coffees are paired with gentle roast profiles that transform the green coffee beans into a fantastic brewing and tasting experience. Flattop offers limited edition roasts of a rotating variety.

Roastery Origins

I started roasting coffee in 2012 after realizing how important very fresh beans are to brewing exceptional espresso. In my quest to brew consistently extraordinary espresso at home, I struggled to find a reliable source of fresh coffee beans locally. Sometimes I could get beans that were roasted within a couple days, but other times, I was looking at beans that were already 2 weeks old. I also got mixed results after ordering from some of the leading third wave coffee producers online. This started my journey into coffee roasting. Over the last several years, I've continued to pursue this craft through enhanced roasting methods and equipment.

Eventually, I began to consistently produce coffees and coffee blends that I was satisfied with. After sharing some of this with friends, I began to get some great feedback and responses. I've had more than one person tell me that the coffee I produced for them was the best they've ever tasted. I think that the results I achieved were due to:

  1. Selecting and roasting only extremely high quality, single-origin beans
  2. Carefully tuning and monitoring the roast profile
  3. Getting the coffee in the hands of the consumer within 48 to 72 hours of the actual roast

I started Flattop Coffee Roastery in 2014 in stealth startup mode wondering if others out there might want to experience coffee the way that we do. The first roasts I created for others were available only to friends and family. With a greater roasting capacity now, I have decided to open things up a bit and allow others to participate in this experiment. 

I'm a bit unsure how far I will go with this at present, but this has been a good creative outlet for me so far. I am experimenting with and developing a variety of coffees and roast profiles at this time. We are operating out of beautiful Estes Park, Colorado.

We take great pains to ensure that Flattop Coffee is delivered to you within 48 - 72 hours after the actual roast. This factor alone may do more for you than any other to improve your coffee brewing and consuming experience. And finally, we want to help you improve your brewing techniques and methods. How We Roast

I am currently roasting coffee on two calibrated roasters. The first is a small custom made, solid drum, gas powered, sample roasting machine that features 3 digital thermocouples connected via USB to computerized roasting software. This smaller machine is calibrated to match the parameters on my larger 3KG machine. With this configuration, I am able to closely monitor and develop roast profiles on the smaller sample roaster and then scale the batches up on the larger roaster to meet demand.

When We Roast

We currently roast once per week on Mondays. If you place an order, it will be filled during the next scheduled roast. Orders placed on Monday after 11 AM Mountain Time, will be filled during the following Monday roast.

How We Ship

All coffees are shipped using 2 to 3 day shipping within 24 hours of roasting time. This gets the beans to you within 48 - 72 hours of the actual roast in most cases.

We believe that a fundamental element of experiencing great coffee is consuming it within 2 days to 2 weeks of the roast. Most coffees you'll find in your grocery store (and even some of your local coffee shops) are well past this prime. This means you're missing the majority of what that coffee has to offer by the time you drink it. The flavors and aromas have faded and the beans are declining. The energy and passion put into the growing and processing of these beans by the growers is somewhat wasted if we're only experiencing the coffee well past its prime.

By aligning our roasting schedule in lock step with our shipping schedule, we can get you the coffee at its peak so you can experience all that it has to offer.
